Sicilian Almond Biscuit Mix

Sicilian almond (16%), Piedmont hazelnut, lemon from Southern Italy and Sicilian orange, on a rice flour base. Add it to shortcrust dough for citrus-scented biscuits.

Before you start
70 g mix + 250 g flour + 100 g sugar + 2 g baking powder + 125 g soft butter + 1 egg. Knead, rest 15-20 min, shape biscuits. 180°C for 12-15 min.

The story

In Sicily, almond sweets have Arab roots. Almond paste, biscuits, sugared almonds: the almond is at the centre of the island's pastry making. In 1872 Giuseppe Bianca published a manual on growing almond trees in Sicily.

This volume brings that tradition into a simple gesture. Add it to the dough and the biscuit changes.

The origin

In Sicily the almond tree has historic areas, such as the one between Noto and Avola, in the south-east, on warm, dry soils. The harvest runs from July to September: the branches are beaten and the almonds fall onto sheets. The thick shell protects them and preserves their aroma.

The hazelnut is the Tonda Gentile Trilobata from Piedmont. Lemon and orange are citrus fruits from the South. The rice flour is Italian.

The character

Sweet and fragrant. The almond gives roundness, the hazelnut a toasty note, the citrus lightens. In the oven the aroma opens up and fills the kitchen.

Biscotti alle Mandorle di Sicilia
Traditional biscuits, ready in a few steps.

Ingredients

  • 250g flour
  • 100g sugar
  • 70g Vol.15
  • 125g soft butter, 1 egg

Preparation

  1. Mix everything into a smooth dough.
  2. Rest 15-20 minutes.
  3. Shape the biscuits and place on a tray.
  4. Bake at 180°C for 12-15 minutes.
Crostata alle Mandorle Siciliane
A fragrant tart, perfect with afternoon tea.

  • 300g ready shortcrust
  • 3 tbsp Vol.15
  • Jam of choice
  • 1 egg for glazing

Preparation

  1. Line a tin with the pastry.
  2. Sprinkle with Vol.15 and a layer of jam.
  3. Decorate with pastry strips.
  4. Bake at 180°C for 25-30 minutes.
