Umbrian Black Truffle Flavoured Powder

Italian rice flour, Trapani salt, natural flavourings and Umbrian summer truffle. A fine powder that dissolves: for risotto, cream soups and eggs.

Before you start
1 tsp as seasoning at end of cooking on pasta, risotto, eggs, soups, white meats. For soup: 25 g in 250 ml boiling water, cook 3-5 min. For creamy risotto: 10 g added during rice cooking.

The story

There are dishes where you do not see the truffle, you taste it. A creamy risotto, a potato purée, a hot soup. There, a shaving would stay on the surface. You need something that goes into the dish.

This volume was made for that. It is a powder: it mixes in, dissolves, binds.

The origin

The truffle is Tuber aestivum, the summer truffle hunted in Umbria from late May to the end of August. It has a black, warty skin and hazelnut-coloured flesh. It is present at 0.2%, together with natural flavourings.

The base is Italian rice flour. Italy is the largest rice producer in Europe, and more than half of Italy's rice fields are in Piedmont. The salt comes from the salt pans of Trapani.

The character

Delicate and enveloping. The rice flour carries the truffle's aroma into the creaminess of the dish. The flavour is soft, with a note of mushroom and undergrowth. During cooking it gives body to soups and risottos.

Truffle Potato Velouté

Ingredients

  • 500g potatoes
  • 1L vegetable stock
  • 2 tsp Vol.9
  • Olive oil

Preparation

  1. Cook diced potatoes in stock for 15-18 minutes.
  2. Blend until smooth.
  3. Stir in Vol.9 and mix well.
  4. Serve with a drizzle of olive oil.
Risotto al Tartufo Facile
Truffle risotto without fresh truffle.

Ingredients

  • 320g risotto rice
  • 1L vegetable stock
  • 50g butter
  • 1 tbsp Vol.9

Preparation

  1. Toast the rice and deglaze with hot stock.
  2. Continue cooking, adding stock gradually.
  3. Finish with butter and Vol.9.
  4. Rest a minute and serve.
