Senise Crusco Pepper Flavoured Powder

Senise crusco pepper, at 18%, with chickpeas, tomato, leek and herbs on a rice flour base. The flavour of Basilicata in a powder for pasta, risotto and creams.

Before you start
1 tsp as seasoning at end of cooking on pasta, risotto, soups, focaccia, fresh cheeses. For soup: 25 g in 250 ml boiling water, cook 3-5 min. For creamy risotto: 10 g added during rice cooking.

The story

Around Senise, in Basilicata, peppers are dried in summer hanging in the sun, in long strings called serte. Once dried, they keep all year.

Crusco is the next step. The dried pepper, with stalk and seeds removed, is dipped for a few seconds in hot oil and turns crisp. Ground, it colours and flavours the traditional dishes of Basilicata.

The origin

The Senise pepper has thin flesh and little water: that is why it dries well and quickly. It is grown in the Sinni valley, largely within the Pollino National Park.

The other ingredients are Italian: chickpea flour, tomato, leek from Veneto, garlic from the Valle dell'Ufita, Sicilian oregano, rosemary from the Monregalese. The base is rice flour, with Trapani salt.

The character

Sweet and toasty, not hot. Crusco has a rounded taste, with a warm depth. The chickpeas give body, the herbs freshness. Stirred into pasta or risotto, it leaves a warm red colour.

Pasta con Crema di Peperone Crusco

Ingredients

  • 350g short pasta
  • 1 tsp Vol.11
  • 100ml pasta water
  • Olive oil

Preparation

  1. Cook the pasta in salted boiling water.
  2. Dissolve Vol.11 in a ladle of pasta water.
  3. Drain and toss the pasta in the mixture.
  4. Finish with olive oil and serve.
Risotto al Peperone Crusco
A rustic risotto with a vivid colour.

Ingredients

  • 320g risotto rice
  • 1L vegetable stock
  • 1 tbsp Vol.11
  • Grated parmesan

Preparation

  1. Toast the rice and deglaze with hot stock.
  2. Continue cooking, adding stock and Vol.11.
  3. Stir in parmesan at the end.
  4. Serve hot.
